After fifteen wonderful years in Shepherdstown, West Virginia, we find ourselves in a beautiful and natural setting along the deepest stretch of the Potomac river just outside of Hedgesville, West Virginia. The resources here are unparalleled. Local farmers provide eggs, dairy, beef, and produce. A vender at one of our markets is even naturalizing coveys of live quail, replenishing the once lost population for which the farm was originally named.

Every week the finest millers deliver a cache of whole grains and flours both natural and organic, and our local brewmeister provides us with fresh yeast. Pairing these resources and mountain water from our five wells, we yeild a product that is not only unique, but of the greatest integrity.

On a focused tour of France, provided by a Parisian Client, we experienced the breads of Max Poilâne, Jean-Luc Poujauran, Eric Kayser, and the pastry and chocolates of La Maison du Chocolat, Gaston Lenôtre, Fauchon, Marcel Haupois, and numerous others. Using this experience and our new Pavailler oven we are advancing authenicity in the world of artisan breads.

We take no shortcuts. Our fillings and flavorings are created from scratch weekly to protect its integrity and ensure its freshness. Our breads are entirely shaped by hand and baked on the stone hearths in our Pavailler oven.
